Taiwanese-Style Stir-Fried Noodles with Pork, Cabbage & Shiitake Mushrooms

This noodle dish is nostalgic for me because it is homey, familiar and, well, Taiwanese! Yellow (egg based) fresh noodles, pork, dried shrimp, shiitake mushrooms, onion, garlic, cabbage and/or bean sprouts, soy sauce and vinegar are the typical ingredients. Both my mom and grandmother used to make their own versions and here's mine. 

Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Place the pork strips in a bowl and toss with the marinade ingredients. Cover with plastic wrap and refrigerate at least 20 minutes up to overnight.

Combine the sauce ingredients together in a measuring cup or bowl; set aside.

Place the dried shiitake mushrooms in a bowl and cover with hot water; let sit for 20-30 minutes or until softened. Remove the mushrooms to a chopping board and remove the stems; cut the mushroom caps into thin slices and set aside.

Prep the vegetables & set aside.

Bring a large pot of water to a boil and cook the fresh noodles about 1-2 minutes, or until just al dente. Drain in a colander and set aside.

Add 3 tbsp vegetable oil to a hot wok or sauté pan. Add the marinated pork and sauté for about a minute until partially cooked through.

Add the onion, garlic, and the white parts of the scallions; toss to combine. Add the shiitakes and cabbage; cook until the onion and cabbage are translucent and the pork is cooked through.

Add the sauce, green parts of the scallion, bean sprouts and noodles and toss briefly until the all the ingredients are well blended.

Plate the noodles on a serving dish and serve immediately.

Instructions

10 oz pork loin or shoulder cut into 1" strips

1 tbsp soy sauce

1 tbsp vegetable oil

2 tsp rice wine

1 tsp sugar

1/4 tsp white pepper

Pork Marinade

1 lb fresh egg noodles

6 dried shiitake mushrooms

1 bunch scallions cut into 1" sections (white & green parts separated)

1 small onion thinly sliced

4 cloves garlic minced

1 small head napa or green cabbage cored & thinly sliced

8 oz bean sprouts

3 tbsp vegetable oil

Vegetables

3 tbsp soy sauce

1-3 tbsp black vinegar (according to your taste)

1 tsp sesame oil

1/2 tsp white pepper

1/2 cup light chicken stock or water
