Fried Tofu with Garlic, Soy Sauce, Vinegar & Chili Dipping Sauce

If you gave me a choice between French fries or fried tofu, well the answer should be obvious. Even if you're not fond of tofu this fried version is, well, just really, really good. Two tips: it's best to use soft tofu for this dish (crunchy on the outside and melt-in-your-mouth tender on the inside) and also to serve it hot.

Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Cut each block of tofu into 8 pieces. Place back into its container and let drain for about 20 minutes. Drain, place on a cutting board & blot dry with paper towels.

Combine all sauce ingredients together in a bowl; set aside.

Heat 4 cups of vegetable oil in a wok over high heat to 350F. Blot the tofu cubes with paper towels again and add to the oil with tongs or a slotted spoon (you will probably have to cook the tofu in 2 batches so as not to overcrowd the pan). Fry for about 4 minutes, then turn the tofu cubes over & continue frying for another 4 minutes or until golden brown. Remove to a paper towel-lined plate to drain. Fry the 2nd batch of tofu cubes in the same way.

Arrange the fried tofu on a plate & serve with dipping sauce on the side. Best served hot.

Two 14-oz boxes soft tofu

6 tbsp soy sauce

1 tbsp rice vinegar

4 tbsp water

1 tbsp sugar

2 scallions chopped

2 cloves garlic minced

2 tbsp minced fresh cilantro

2 Fresno chilies seeded and thinly sliced

1/4 tsp black pepper

Sauce

4 cups vegetable oil
